I’m so glad you’re here! Today, I’m sharing an easy and delicious Pasta Recipe for Tomato Pasta – Fresh Tomato and Basil Linguine as part of the bi-monthly Ultimate Recipe Challenge.
This recipe is good on so many levels. First, it’s so easy to make and if you are short on time you can make it start to finish in only 15 minutes. Second, it’s FRESH!I used fresh basil from my indoor herb garden (remember the Hanging Gutter Planter I shared last month…it is yielding herbs like crazy and I plucked the basil right from the gutter). My tomato plant isn’t yielding any tomatoes yet but once it does I’ll pick some of those and make this again – my family loved it!
Fresh Tomato and Basil Linguine
1 1/2 pounds tomatoes, finely chopped
3 gloves of garlic, finely chopped
1 bunch of fresh basil, torn
1/2 cup extra virgin olive oil
16 ounce package linguine, cooked according to package directions
Garnish with freshly grated Parmesan cheese
- Gently stir together tomatoes, garlic and basil in a large bowl.
- Drizzle with oil.
- Sprinkle with salt and pepper.
- Mix well and toss with hot cooked linguine.
- Sprinkle with Parmesan cheese.
Serves 6 to 8.
