Hello, friends, and welcome to this week’s Project Inspire{d}.  What kind of week have you been having? I had one of those mom weeks.

We dropped off my youngest son at camp for the first time and I am really missing him.

That would have been fine but tonight, I just got back from dropping my middle son off at the airport for his first flight alone.  He’s going to visit his best buddy who he hasn’t seen in a year so it will be fun but oh, my…..my mommy heart is missing my guys!

A delicious hearts of palm salad with artichoke hearts, romaine lettuce and a tangy citrus Dijon dressing.

This past week I shared a super good, easy to make, and delicious Hearts of Palm Salad with a Zesty Citrus Dijon Dressing.  If you’ve never tried Hearts of Palm give it a whirl! They’re a little crispy, very tasty, and low calorie! If you like water chestnuts you’ll love these.
