  • 2 tbsp raisins
  • 2 tbsp vegetable broth
  • 1 tbsp fresh parsley
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2 large fresh peaches peeled and diced
  • Salt to taste


  • Cook raisins, broth, and 2 tbsp. of water in a small saucepan over medium heat stirring occasionally. Cook for 5 minutes.
  • Remove from heat and add parsley, vinegar, and oil.
  • Stir in peaches and add salt if desired.
