Ingredients

olive oil
1
cup
diced onion

cloves
garlic
chopped

sweet potatoes
peeled and cut into 2-inch chunks
1
pound
Idaho potatoes
peeled and cut into 2-inch chunks

Gala apples
peeled, cored and cut into 2-inch chunks
2
cups
chicken broth
1
cup
water
¼
cup
maple syrup {plus more for drizzling}
½
teaspoon
salt
¼
teaspoon
pepper
Instructions
Heat oil in a large, lidded pot over medium heat.
Add onion, cook 4 minutes.
Add garlic, cook 1 minute.
Stir in sweet potatoes, Idaho potatoes, apples, chicken broth and 1 cup water.
Cover and bring to a simmer.
Cook 20 minutes.
Blend in blender in small batches until smooth.
Return to heat.
Stir in maple syrup, salt and pepper.
Drizzle with maple syrup before serving.
