Mocha Whipped Cream Frosting

  • 1 cup heavy whipping cream chilled
  • 3 tablespoon sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon instant espresso powder *can substitute instant coffee

Instructions

Chocolate Coffee Cupcakes

  • Preheat oven to 350°.
  • In a large bowl, mix all of the dry ingredients together and set aside.
    1 ⅓ cups all-purpose flour, 2 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt, ½ cup unsweetened cocoa powder, 1 cup light brown sugar, 3 tablespoon instant cappuccino powder
  • In another bowl, mix butter, eggs, and sour cream together.  Pour into dry ingredients, rapidly mixing with a wooden spoon until batter is smooth.
    ½ cup unsalted butter, 2 eggs, 1 cup sour cream
  • Spoon batter into cupcake papers, filling cups about ⅔ full.  Cook for 15-20 minutes or until a tester inserted into the center comes out clean.  Remove from oven and cool.
  • Frost cooled cupcakes just before serving.  Dust with cocoa powder.

Mocha Whipped Cream Frosting

  • Place heavy whipping cream, sugar, cocoa, and coffee powder in a large bowl and mix together.
    1 cup heavy whipping cream, 3 tablespoon sugar, 1 tablespoon unsweetened cocoa powder, 1 tablespoon instant espresso powder
  • Stir, cover, and let sit in the refrigerator for about an hour, until chocolate and coffee have dissolved. 
  • Remove from refrigerator and beat with an electric mixer until stiff.

Notes

I like to chill the beaters in the freezer before beating the frosting for a lighter and fluffier end result.
