Let slow-cooked deliciousness save dinner with this crock pot pork loin roast! Not only does this juicy and tender cut of meat provide an excellent source of protein, it is also surprisingly easy to prepare.
2cupschicken brothyou can use any broth or stock you prefer or have on hand
Instructions
Spray crock pot liner with cooking spray or olive oil.
Layer sliced onions on the bottom of the crock pot.
Place pork roast fat side up on top of onion slices.
Drizzle top of pork roast with olive oil.
Combine spices and pat on to top and sides of pork roast.
Pour broth around pork roast avoiding top so that you don't knock off any of the delicious spices!
Cover and cook on high for 3 to 4 hours or low for 5 to 6 hours until internal temperature registers 145 degrees. See notes for tips!

Frozen pork roast / frozen pork loin - You can easily substitute frozen for fresh pork. Simply follow all of the directions regarding seasoning and prep but adjust the overall cooking time to 4 to 5 hours on high and 6 to 7 hours on low heat and use a meat thermometer!
Cooking temperatures of crock pots / slow cookers can vary greatly so it's best to check the internal temperature of your food on the low end of the time given. The only problem is that when you remove the lid a lot of heat is released which can then add to the cooking time. The best way to monitor the temperature is with a probe, which some slow cookers come with (like this one) or to use The MeatStick. I prefer the second option because I can easily monitor the internal temperature of whatever meat dish I'm cooking whether it be in the slow cooker, the air fryer, the oven, or even the grill. When patting the spices on to the roast you can also mix up the spices, add the olive oil, create a paste, and rub that on to the meat.
