Protein Banana Bread Recipe

  • Preheat your oven to 350 degrees F, grease loaf pan and line with parchment paper. 
  • In a large mixing bowl, whisk the mashed bananas, eggs, sugar, milk, Greek yogurt, and vanilla extract together until combined. 
    1 cup bananas, 2 eggs, ½ cup skim milk, ⅓ cup Greek yogurt, ½ cup brown sugar, 1 teaspoon vanilla extract
  • In a separate large bowl mix together the almond flour, protein powder, cinnamon, baking soda, baking powder, and salt. 
    1 teaspoon cinnamon, 1 ⅔ cup almond flour, ⅓ cup whey protein, 1 teaspoon baking powder, 1 teaspoon baking soda, ¼ teaspoon salt
  • Gradually add the dry ingredients to the wet ingredients, stirring until well combined and none of the flour mixture remains. 
  • *Stir in chocolate chips, walnuts, or almonds at this point if desired. 
    1 cup cacao chips
  • Pour banana bread batter into the prepared loaf pan, leveling off the top for even baking. 
  • *Top with almond slices (½) cup or banana slices if desired.

  • Bake for about 40-45 minutes, or until a toothpick inserted in the center of the loaf comes out clean. 
  • Allow the bread to cool in the pan on a wire rack for 10 minutes before transferring to the wire rack to cool completely. 
  • Serve at room temperature.
