1cupchocolate chips ~ I used cacao ~ they intensified the flavor of the coffee to just the right degree
Instructions
Preheat oven to 350 degrees F.
Line a muffin tin with paper liners.
Using a mixer mix the melted butter into the smashed banana.
Mix in sugar, egg, coffee and vanilla.
Add the flour just until blended.
Gently fold in chocolate chips.
Pour mixture into muffin tin and bake for 25 minutes.
Cool on rack.
