Banana Coffee Chocolate Chip Muffins

Ingredients

  • cup melted butter
  • 2 large rip bananas smashed
  • ¾ cup sugar
  • 1 egg beaten
  • ½ teaspoon vanilla extract
  • 1 ½ tablespoons of fresh strong brewed coffee {make a cup and drink the rest!}
  • 1 tsp. baking soda
  • tsp. salt
  • 1 ½ cups all-purpose flour
  • 1 cup chocolate chips ~ I used cacao ~ they intensified the flavor of the coffee to just the right degree

Instructions

  • Preheat oven to 350 degrees F.
  • Line a muffin tin with paper liners.
  • Using a mixer mix the melted butter into the smashed banana.
  • Mix in sugar, egg, coffee and vanilla.
  • Add the flour just until blended.
  • Gently fold in chocolate chips.
  • Pour mixture into muffin tin and bake for 25 minutes.
  • Cool on rack.
