Banana Coffee Chocolate Chip Muffins

I talk a lot about how much I enjoy quiet time {and coffee}. It's not a matter of not appreciating having a house full but sometimes I just need to have that quiet time to focus and plan my day. Mornings are my time to get the day together and set goals. I always have a cup of coffee...always, and it's important to me that that cup be GOOD.
I recently found McCafé coffee at Walmart. I buy pods right now but I also like to keep bags of premium coffee on hand for when I pull out the big guns...aka, the old-fashioned coffee maker...and make an entire pot. McCafé comes in both forms and in 8 flavors (I will be buying the other flavors-variety is the spice of my coffee cup).
I found the McCafé in the coffee aisle ~ the pods were to the right of the bags. Once I reached high to get the pods I was ready for action! Oh....did you notice that the McCafé is 100% Arabica Beans....I'm a coffee geek....that impresses me.
I was excited to try it and I am really glad I did. To me, good coffee isn't just the flavor but it's the experience......the aroma while it's brewing, the first sip and the lingering taste. (I made you want a cup now, didn't I???).
I couldn't wait once I got home to try it and the next morning that's the first thing I did. I was so pleased.....I hid the box. I know....I shouldn't do that....so I did share with my husband when he got up {he loved it, too....maybe I shouldn't have shared....drat}. He thought it would be great added to a recipe...he leaves the WHAT of the recipe to me, and I couldn't have agreed more.
The next day I set about making a batch of fresh muffins early in the morning to have with my coffee. I had two little helpers....my youngest son (the kid in the green robe) and a little bird he thought would look cute in the pictures. 😉 They {the muffins} were so good and the McCafé coffee added just the flavor I was looking for.
📖 Recipe
Ingredients
- ⅓ cup melted butter
- 2 large rip bananas smashed
- ¾ cup sugar
- 1 egg beaten
- ½ teaspoon vanilla extract
- 1 ½ tablespoons of fresh strong brewed coffee {make a cup and drink the rest!}
- 1 tsp. baking soda
- ⅛ tsp. salt
- 1 ½ cups all-purpose flour
- 1 cup chocolate chips ~ I used cacao ~ they intensified the flavor of the coffee to just the right degree
Instructions
- Preheat oven to 350 degrees F.
- Line a muffin tin with paper liners.
- Using a mixer mix the melted butter into the smashed banana.
- Mix in sugar, egg, coffee and vanilla.
- Add the flour just until blended.
- Gently fold in chocolate chips.
- Pour mixture into muffin tin and bake for 25 minutes.
- Cool on rack.
As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
I overfilled the cups but I like the way they rose.....I had enough for 10 muffins but if you are a little less generous you will have an even dozen.
I made a full cup of coffee to use in the recipe and then, of course, drank the rest while I was waiting for the muffins to bake.
