Berry Cobbler in a Crockpot

Ingredients

Instructions

  • Combine flour, ¾ cup sugar, baking powder, salt, and cinnamon.
  • Combine eggs, milk, and oil.
  • Stir the above into the dry ingredients until moistened.
  • Spread the batter evenly over bottom of greased slow cooker. I use a cube of butter to grease my crockpot rather than a spray.
  • In saucepan combine berries, water and ¾ cup sugar.
  • Bring to a boil and then remove from heat.
  • Pour hot berry mixture over batter in crockpot.
  • Cook on high for 2 hours or until toothpick inserted in batter comes out clean. Turn off cooker and allow to set for 30 minutes before serving.
  • This would have been delicious with vanilla ice cream but in lieu of that I used some Cool Whip and nobody complained. ;)
