Melt coconut oil in a skillet over medium-high heat.
Once the oil has fully melted, start cooking chicken approximately 3 minutes on each side until slightly brown and cooked through.
Mix together brown sugar, soy sauce, apple cider vinegar, ginger, garlic, and cornstarch.
Pour sauce over chicken and stir constantly until sauce thickens approximately 2 to 3 minutes.
Place cooked rice on the bottom of a bowl.
Top with broccoli.
Add teriyaki chicken and serve!
