Classic Egg Salad Recipe

Delicious and easy egg salad recipe - creamy classic egg salad perfect for any picnic or lunch and a great way to use up hard boiled eggs.

Ingredients

  • 8 hard boiled eggs
  • cup mayonnaise
  • 2 tsp. yellow mustard
  • 1 tsp. lemon juice
  • 2 tbsp. chives finely chopped

Instructions

  • Peel and chop hard boiled eggs.
  • Gently stir in mayonnaise, mustard, lemon juice and one chives.
  • Season with salt and pepper and paprika if desired.
  • Serve as is or on bread.
