Fresh Bolognese Sauce Made with Kefir

Ingredients

  • ½ cup of Lifeway Low Fat Kefir Plain and Unsweetened
  • ½ cup of Extra-Virgin Olive Oil
  • 1 medium onion chopped
  • 1 garlic clove peeled and chopped
  • 1 zucchini peeled and sliced thin
  • 1 carrot sliced thin
  • 1-8 ounce package Baby Bellas mini Portobello mushrooms sliced
  • 1-28 ounce can diced tomatoes
  • 1 pound ground beef
  • 6 fresh basil leaves chopped
  • Salt and pepper to taste

Instructions

  • In a large skillet heat olive oil.
  • Add the onion and garlic and saute until tender.
  • Add the zucchini, carrots and mushrooms and saute for an additional 5 to 10 minutes.
  • Raise heat to medium high and add the ground beef stirring until cooked through and no pink remains; approximately 10 minutes.
  • Add the tomatoes, Kefir, salt, pepper and basil and cook over medium high heat until the sauce thickens.
  • Serve with pasta of your choice.
