2poundsof cooked skinlessboneless chicken breasts shredded or cut into bite sized pieces {I brine & poach my chicken for extra flavor and moistness}
64ouncesof chicken broth {I like to buy 6 - 32 ounce boxes in a one package at Sam's club-this is quite economical}
2carrots peeled and sliced
1stalk of celery sliced
Fresh ground salt and fresh ground pepper to taste
1 - 16ouncepackage of broad noodles
Instructions
Place the chicken broth in a stockpot over medium high heat and bring just to a simmer. Add carrots and celery and simmer until tender, about 10 minutes.
In another pot, prepare your noodles according to the direction on the package, cooking until just tender. Drain the noodles and add them the the stockpot along with the shredded chicken.
Season with salt and pepper.
Heat until nice and hot-serve!
