Homemade Chicken Noodle Soup ~ Comfort in a Bowl

Bowl of Instant Pot Chicken Noodle Soup

Ingredients

  • 2 pounds of cooked skinless boneless chicken breasts shredded or cut into bite sized pieces {I brine & poach my chicken for extra flavor and moistness}
  • 64 ounces of chicken broth {I like to buy 6 - 32 ounce boxes in a one package at Sam's club-this is quite economical}
  • 2 carrots peeled and sliced
  • 1 stalk of celery sliced
  • Fresh ground salt and fresh ground pepper to taste
  • 1 - 16 ounce package of broad noodles

Instructions

  • Place the chicken broth in a stockpot over medium high heat and bring just to a simmer.  Add carrots and celery and simmer until tender, about 10 minutes.
  • In another pot, prepare your noodles according to the direction on the package, cooking until just tender.  Drain the noodles and add them the the stockpot along with the shredded chicken.
  • Season with salt and pepper.
  • Heat until nice and hot-serve!
