My Mom’s Homemade Chicken Noodle Soup Recipe – it’s comfort in a bowl!
It’s snowy and cold and my two youngest boys are sick – so what should I make for dinner? Chicken Noodle Soup of course! My mom made the best chicken noodle soup with homemade noodles. When she made soup, I was in kid heaven.
Unfortunately, I did not get my mom’s recipe before she passed away but over the years I have come up with a recipe that’s sort of close to Mom’s. Mine is quicker to make, no homemade noodles, and is tasty…but not quite Mom’s.
Homemade Chicken Noodle Soup
Ingredients
2 pounds of cooked skinless, boneless chicken breasts shredded or cut into bite sized pieces {I brine & poach my chicken for extra flavor and moistness}
64 ounces of chicken broth {I like to buy 6 - 32 ounce boxes in a one package at Sam's club-this is quite economical}
2 carrots peeled and sliced
1 stalk of celery sliced
Fresh ground salt and fresh ground pepper to taste
1 - 16 ounce package of broad noodles
Instructions
- Place the chicken broth in a stockpot over medium high heat and bring just to a simmer. Add carrots and celery and simmer until tender, about 10 minutes.
- In another pot, prepare your noodles according to the direction on the package, cooking until just tender. Drain the noodles and add them the the stockpot along with the shredded chicken.
- Season with salt and pepper.
- Heat until nice and hot-serve!
