Italian Barbecue Grilled ChickenIf you're looking for a super simple and delicious chicken dinner that's perfect for a weeknight dinner, look no further.  I have a great recipe for you, plus a story to go with it.

First the Story

Do you like to grocery shop? No judgment here....sometimes, to be very honest with you, I don't. When I used to work full time out of the house the last thing I wanted to do after a 10 to 12 hour day was to go to the grocery store but kids need to eat and I needed something more than vending machine food to survive. 😉

Even though I primarily work from home now, I still have a busy schedule.  Case in point, last Wednesday.  My husband had a mid-morning doctor's appointment, then an early afternoon appointment with another provider who helps with his care, and then, I had a job interview later in the afternoon (yes, I'm looking for a job....again! Does it ever end???).  Anyway, we also had nothing to eat in the house unless you count the mini bagels at the bottom of the freezer and the peanut butter in the cupboard.  Okay, we had a little more than that but not much more so I had to grocery shop.

In a bit of a toddler rage, I fussed to myself that I did not want to shop (I was just a few seconds shy of a tantrum) and then, lightbulb, Giant Eagle Curbside Express!

If you've never tried it I'm here to walk you through the process.  It's so easy and customers can try it for free (the standard fee is waived for your first 3 orders).

I visited the Giant Eagle website, logged in and started to shop. I knew I wanted to stick to a budget of $80.00 and as I added items to my cart, I could see my total in the upper right-hand corner of my screen.  No more stunned looks on my face when the cashier tells me my total - I was in total control of how much I spent.  Now, back to shopping.  First, I found a new recipe I wanted to try and it almost made me giddy, seriously, that next to the recipe there was a button to click that added everything I needed for that recipe to my shopping cart including fresh chicken.  Woot.  I mean honestly, no guesswork, no wandering down aisles looking for just the right rice or dressing.  When you order online a personal shopper picks your groceries, not a robot.

After I shopped a bit more even adding some fresh produce in the form of bananas to my cart and leaving a note for the personal shopper about how I wanted my bananas (see above!), I added a few bulky and heavy items to my order, Bounty white select-a-size paper towels, and a Diet Coke 12-pack fridge pack, plus fresh lunch meat from the deli no less, fresh eggs, orange juice, yogurt, candy, syrup and the list goes on.

When I was done shopping, I chose a time slot to pick up my groceries and then completed my order.  I was even given the option to pay when I picked up my groceries.

Curbside Express - stop and get your groceries!I arrived at the designated time, parked in the area clearly marked for Curbside Express and called the number on the sign.  Within a few minutes, a very friendly employee came out with my groceries.  I paid from my car which meant, I didn't have to get out at all.  I then popped my trunk for the super nice Curbside picker to put my groceries in, which he did.  I loved it! Curbside Express allowed me to have more time to spend with my husband and kids that day which was wonderful.

As a side note, the fresh chicken I ordered was exactly the kind I would have picked myself and was even placed in an additional bag so there was no drippage in my trunk.  Also, the bulky heavy items were loaded directly into my car by the Curbside picker.  I didn't have to lift a finger.

Now, for the Recipe

With the time I saved that day I was able to make a delicious meal for my family and we all loved it.  It is so good, you're going to want to save this recipe for anytime you're in a pinch time wise...or heck, any time you're just hungry.

Italian Barbecue Grilled Chicken

Italian Barbecue Grilled Chicken

Ingredients:

Italian Barbecue Grilled Chicken

1 16oz. package Giant Eagle Basmati Rice

1 cup Sweet Baby Ray’s Barbeque Sauce

1 cup Ken’s Zesty Italian Dressing

4 pieces Boneless Chicken Breasts - I butterfly mine so they cook quicker 🙂

Directions:

Italian Barbecue Grilled Chicken

Combine Sweet Baby Ray's Barbecue Sauce and Ken's Zesty Italian Dressing.

Italian Barbecue Grilled Chicken

Pour over chicken and let marinate in refrigerator 4 hours or overnight.

Cook Giant Eagle Basmati Rice per instructions on package.

While rice is cooking, grill chicken approximately 15 minutes or until done.

So there you have it.  A new recipe to try plus a new way to shop and save time.  You can thank me later.  🙂
