Grilled Peaches with a Tangy Fresh Berry Sauce

There's still some grilling weather left here though the days of summer are waning faster than I care to think about.  While there are still fresh fruits readily available we decided to have a light and tasty grilled dessert made with Fresh Peaches and Berries.

This is a great dessert to make when having guests over because the peaches can be grilled quickly and the berry sauce can be made up to 2 days in advance.

Ingredients:

½ pint fresh raspberries

1 cup strawberries hulled and quartered

2 to 3 tablespoons sugar {start with less ~ you can always add more to taste}

4 large ripe peaches, halved and pitted {each peach will serve 2}

2 tablespoons melted butter

Sugar for sprinkling on your peaches

Fresh mint to garnish

1.  Make your sauce ~ combine the raspberries, strawberries and sugar in a food processor and process until it is a puree.  It will be the consistency of tomato soup. 

2.  Remove from processor and strain over a bowl pushing out the raspberry seeds as you strain it.  They are small so the smaller the strainer holes the better.   I did this in batches rinsing out my strainer in between each batch.  

3.  Cover your sauce and refrigerate until chilled; up to 2 days. 

4.  Preheat your grill to medium high.  

5.  Prepare your peaches by brushing each fleshy side with the melted butter and sprinkling with sugar.  

6.  Place your peach halves flesh side down on the grill directly above the flame.  Cook for 5 to 10 minutes until the peach is slightly softened.  If  your peach is very ripe it will require less time on the grill.

To serve:

Place sauce on a plate and place a peach half on top.  Garnish with a mint sprig and serve alone or with ice cream or whipped cream if desired.
