Slow Cooker Cabbage Soup

This delicious cabbage soup recipe is packed with veggies and flavored with herbs and spices. It's low in calories and high in fiber and vitamins. Serve it hot topped with shredded parmesan cheese and some croutons on top for a delicious and healthy meal.

Ingredients

  • 4 cups chicken stock
  • 6 ounces tomato paste
  • 1 head cabbage shredded - about 1 ½ cups
  • 4 celery stalks chopped
  • 2 carrots chopped
  • 1 onion chopped
  • 15 ½ ounces great northern beans 1 can - rinsed and drained
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • ½ teaspoon salt

Instructions

  • In a 5 or 6 quart slow cooker whisk together chicken stock and tomato paste.

  • Stir in cabbage, celery, carrots, onion, great northern beans, garlic, thyme, bay leaf, and salt.

  • Cover and cook on low setting until vegetables are tender, 6 to 8 hours.
  • Remove thyme sprigs and bay leaf.
  • Serve as is or topped with cheese.
