📋Instructions

Shred cabbage, chop celery, carrots, and onion and set aside.

Whisk together tomato paste and chicken stock. Add veggies and spices.

Add drained and rinsed great northern beans. I like to use this gadget for easy straining! Stir well. Put on the lid and cook for 4 to 6 hours on low.

🍴Substitutions

  • Dried Thyme - 1 tsp. of dried thyme can be substituted for 2 sprigs of fresh thyme
  • Garlic Powder - ¼ tsp. of garlic powder can be substituted for 2 garlic cloves.
  • Alternatives to 1 Bay Leaf - in place of a bay leaf you can substitute any ONE of the following: ½ tsp. crushed bay leaves, 2 dried bay leaves, ¼ tsp. dried oregano, ¼ tsp. dried thyme
  • Tomato Sauce or Tomato Puree - For every 1 tablespoon of tomato paste needed, use 3 tablespoons of tomato puree or sauce.

The simplest way to store soup if you will be eating it in the next 3 days is in the refrigerator. Once the soup has cooled (within 2 hours of cooking) place it into an airtight container and place it in the fridge. That's it!

Slow Cooker Cabbage Soup

This delicious cabbage soup recipe is packed with veggies and flavored with herbs and spices. It's low in calories and high in fiber and vitamins. Serve it hot topped with shredded parmesan cheese and some croutons on top for a delicious and healthy meal.

Ingredients

  • 4 cups chicken stock
  • 6 ounces tomato paste
  • 1 head cabbage shredded - about 1 ½ cups
  • 4 celery stalks chopped
  • 2 carrots chopped
  • 1 onion chopped
  • 15 ½ ounces great northern beans 1 can - rinsed and drained
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • ½ teaspoon salt

Instructions

  • In a 5 or 6 quart slow cooker whisk together chicken stock and tomato paste.
    4 cups chicken stock, 6 ounces tomato paste
  • Stir in cabbage, celery, carrots, onion, great northern beans, garlic, thyme, bay leaf, and salt.
    1 head cabbage, 4 celery stalks, 2 carrots, 1 onion, 15 ½ ounces great northern beans, 2 cloves garlic, 2 sprigs fresh thyme, 1 bay leaf, ½ teaspoon salt
  • Cover and cook on low setting until vegetables are tender, 6 to 8 hours.
  • Remove thyme sprigs and bay leaf.
  • Serve as is or topped with cheese.
