How-To Make a Thanksgiving Leftovers Pie

It's the day after Thanksgiving and you're wondering what to do with all those Thanksgiving Leftovers. You don't necessarily just want to reheat that juicy turkey in the microwave and risk drying it out but a sandwich isn't an option.

It that's the case, this delicious and EASY Thanksgiving leftover turkey pot pie is the perfect comfort food to use up all that tasty extra turkey and is something the entire family will enjoy.

This easy turkey pot pie was inspired by my simple slow cooker turkey and stuffing recipe. While a side dish isn't really necessary for this meal, my Mom's delicious creamy cucumber salad is a nice light accompaniment.

🥐Ingredients

  • unbaked pastry pie crusts - I use store-bought pie crust but you can certainly use your favorite homemade pie crust recipe or this one
  • boneless cooked turkey breast or dark meat or a combo of both cubed into bite-size pieces
  • leftover veggies (mixed vegetables, green beans, etc.)
  • leftover turkey gravy - if you don't have enough extra gravy, gravy from a jar is fine
  • mashed potatoes - you could also use mashed sweet potatoes like these for a more unique flavor
  • cranberry sauce - I used a half a can of jellied cranberry sauce but this easy recipe for homemade cranberry sauce is also an option
  • stuffing - leftover or a box of stuffing will work just fine prepared per the instructions on the box
  • egg

Preheat oven to 350°F.

Line pie plate with 1 of the unbaked crusts. I like to allow my crusts to sit at room temperature for about 15 to 20 minutes so they are easier to work with.

Add the turkey to the bottom crust evenly.

Pour 1 cup of leftover gravy over the top of the turkey.

Cover with mashed potatoes smoothing out with the back of a spoon for a nice base.

Top with veggies and a layer of cranberry sauce.

Spoon stuffing over the top of the cranberry sauce.

Pour remaining gravy over the stuffing.

Cover with top crust and try to flute the edges better than I did! 😉 

Use a sharp knife to vent pie crust with small slits and use a pastry brush to apply the egg wash.

Place on a baking sheet to catch any drips and bake for a cook time of 45 minutes until the top is a nice golden brown.

Remove from oven, allow to cool for 5 minutes, slice and serve.

🍴Substitutions

  • Puff pastry or refrigerated crescent rolls instead of traditional pie dough.
  • Rotisserie chicken or leftover chicken can be used but then, this would be a chicken pot pie!

📖 Variations

  • Cast iron skillet in place of a pie dish.
  • Follow all the steps for this recipe as instructed but place leftovers in smaller individual ramekins (I recommend 10 ounce ramekins) and top with crescent rolls. You can also flip over the ramekins and place on rolled out pie crust, trace the ramekin edge with a paring knife. Fill ramekin with the turkey mixture, place crust on top. Use an egg wash to brush the top of the pie crust and bake as usual. Roll any extra dough into a ball, wrap in plastic wrap and use within a couple days to make some delicious hand pies or mini pies.

  • 2 pie crusts refrigerated
  • 1 pound turkey
  • 2 cups turkey gravy gravy from a jar is fine
  • 2 cups mashed potatoes
  • ½ cup cranberry sauce
  • 2 cups stuffing
  • 1 egg 1 egg lightly beaten for egg wash
  • 1 cup mixed veggies
