Southwestern Pasta Casserole

Southwestern Pasta Casserole from cupcakesandcrinoline.com

Ingredients

  • 12 ounces pasta such as rotini or ziti
  • 1 can chili 15 ounces no beans
  • 1 can 10 ounces mild enchilada sauce
  • 1 ¼ cups shredded cheddar cheese
  • ¼ cup chopped fresh cilantro

Instructions

  • Preheat oven to 350 degrees.
  • Coat a 2 ¼ quart baking dish with butter or oil.
  • Cook pasta according to package directions, drain and set aside.
  • In a large bowl mix chili, enchilada sauce, cilantro and ½ cup cheese.
  • Stir in pasta.
  • Place in baking dish and cover with foil.
  • Bake 45 minutes.
  • Remove foil and add remaining cheese.
  • Bake until cheese is melted; approximately 5 minutes.
  • Let cool 10 minutes before serving.
  • May add sour cream and cilantro before serving if desired.
