Southwestern Pasta Casserole ~ National Noodle Day
Did you know it was National Noodle Day? Don’t feel bad if you didn’t….I didn’t either until a few weeks ago. 😉 But now, since I know, I felt it only fitting to share a noodle recipe with you today and not only am I sharing a recipe with you but so are 11 other bloggers ~ so sit back, check out my Southwestern Pasta Casserole Recipe and then visit all the other wonderful blogs to get their recipes. Now….let’s all cheer for the versatile noodle {if any of you were cheerleaders feel free to pull out your pompoms and do a little dance!}.
Ingredients
12 ounces pasta such as rotini or ziti
1 can chili (15 ounces) no beans
1 can (10 ounces) mild enchilada sauce
1 1/4 cups shredded cheddar cheese
1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 350 degrees.
- Coat a 2 1/4 quart baking dish with butter or oil.
- Cook pasta according to package directions, drain and set aside.
- In a large bowl mix chili, enchilada sauce, cilantro and 1/2 cup cheese.
- Stir in pasta.
- Place in baking dish and cover with foil.
- Bake 45 minutes.
- Remove foil and add remaining cheese.
- Bake until cheese is melted; approximately 5 minutes.
- Let cool 10 minutes before serving.
- May add sour cream and cilantro before serving if desired.
