Southwestern Pasta Casserole ~ National Noodle Day
Did you know it was National Noodle Day? Don't feel bad if you didn't....I didn't either until a few weeks ago. 😉 But now, since I know, I felt it only fitting to share a noodle recipe with you today and not only am I sharing a recipe with you but so are 11 other bloggers ~ so sit back, check out my Southwestern Pasta Casserole Recipe and then visit all the other wonderful blogs to get their recipes. Ingredients
- 12 ounces pasta such as rotini or ziti
- 1 can chili 15 ounces no beans
- 1 can 10 ounces mild enchilada sauce
- 1 ¼ cups shredded cheddar cheese
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 350 degrees.
- Coat a 2 ΒΌ quart baking dish with butter or oil.
- Cook pasta according to package directions, drain and set aside.
- In a large bowl mix chili, enchilada sauce, cilantro and Β½ cup cheese.
- Stir in pasta.
- Place in baking dish and cover with foil.
- Bake 45 minutes.
- Remove foil and add remaining cheese.
- Bake until cheese is melted; approximately 5 minutes.
- Let cool 10 minutes before serving.
- May add sour cream and cilantro before serving if desired.
As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.

Now this is what I call comfort food! There must be a canned vegetarian chili I can use for this recipe! π
I have never used tofu (ever!) but I wonder if you could make a tofu chili to substitute?!? π
