A smooth velvety soup, without the cream. The sweetness of the pureed apples and sweet potatoes is perfectly complemented by the addition of fresh onions and garlic. Pairs well with homemade sourdough bread and praline bacon bits.
Stir in sweet potatoes, Idaho potatoes, apples, chicken broth and 1 cup water.
Cover and bring to a simmer.
Cook 20 minutes.
Blend in blender in small batches until smooth.
Return to heat.
Stir in maple syrup, salt and pepper.
Drizzle with maple syrup before serving.
