Sweet Potato and Apple Soup

A smooth velvety soup, without the cream. The sweetness of the pureed apples and sweet potatoes is perfectly complemented by the addition of fresh onions and garlic. Pairs well with homemade sourdough bread and praline bacon bits.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic chopped
  • 1 ½ lbs sweet potatoes peeled and cut into 2-inch chunks
  • 1 pound Idaho potatoes peeled and cut into 2-inch chunks
  • 2 Gala apples peeled, cored and cut into 2-inch chunks
  • 2 cups chicken broth
  • 1 cup water
  • ¼ cup maple syrup {plus more for drizzling}
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Heat oil in a large, lidded pot over medium heat.
  • Add onion, cook 4 minutes.
  • Add garlic, cook 1 minute.
  • Stir in sweet potatoes, Idaho potatoes, apples, chicken broth and 1 cup water.
  • Cover and bring to a simmer.
  • Cook 20 minutes.
  • Blend in blender in small batches until smooth.
  • Return to heat.
  • Stir in maple syrup, salt and pepper.
  • Drizzle with maple syrup before serving.
