Sweet Potato and Apple Soup and Some Fall Table Decor Ideas
There is finally a chill in the air here in my part of the world and I am loving it. It's time to start
The center of the table is reserved for some gourds that will last throughout the season placed in arustic serving bowl that is food safe {multipurpose} ~ gotta love it.
In addition to placing the gourds in the bark bowl, also made some quick and easy place cards with them adding a tag around the stem of the mini pumpkins and using a mini clothespin to attach a mum from the garden to the place card for me.
I'm the only girl in the house so I get the flower by default. I placed the place cards on a wood bark cake stand {also food safe} along with some glittery pinecone mushrooms {next week, there'll be some cupcakes on that cake stand}.
And now for the soup ~ I love a good hearty healthy soup when Autumn arrives and all through the winter and this Sweet Potato-Apple Soup is just enough sweet to not be overwhelming and so filling all I needed to add was some fresh bread and our dinner was complete. I have the crumbiest soup and cereal bowls. I bought some new ones last year and I must have left home without my brain because they make no sense whatsoever {it's sort of hard to mess up buying a bowl but in this particular instance, I messed up big time}.

That being said, my family was so happy that I got these double-handled soup crocks ~ they can now eat soup and drink from the side without it dripping down their chin. I am so thrilled with these crocks and the soup that was in them.

Sweet Potato and Apple Soup
Ingredients
- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cloves garlic chopped
- 1 ½ lbs sweet potatoes peeled and cut into 2-inch chunks
- 1 pound Idaho potatoes peeled and cut into 2-inch chunks
- 2 Gala apples peeled, cored and cut into 2-inch chunks
- 2 cups chicken broth
- 1 cup water
- ¼ cup maple syrup {plus more for drizzling}
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Heat oil in a large, lidded pot over medium heat.
- Add onion, cook 4 minutes.
- Add garlic, cook 1 minute.
- Stir in sweet potatoes, Idaho potatoes, apples, chicken broth and 1 cup water.
- Cover and bring to a simmer.
- Cook 20 minutes.
- Blend in blender in small batches until smooth.
- Return to heat.
- Stir in maple syrup, salt and pepper.
- Drizzle with maple syrup before serving.
