Red Hot and Blue Potato Salad is made with red potatoes, onions, celery, hard boiled eggs, and mayonnaise and it may be the best potato salad you have ever had!

PREP TIME: 20 MIN

5 pounds of Red Potatoes 1 dozen hard cooked eggs 1 onion, diced 1 stalk celery, finely chopped 32 ounces mayonnaise Salt to taste Black pepper to taste

COOK TIME: 30 MIN

Step 1

Boil or steam red potatoes with the skins on until soft but not too soft.

This potato salad is so good there's almost never any leftovers!

Step 2

Allow potatoes to cool and cube cooked potatoes.

Peel and slice hard boiled (hard cooked) eggs and add to large bowl with the potatoes.

This potato salad always gets raves and seconds are in order. Make it ahead of time because it's even better the next day!

Add the celery and onion and sprinkle with salt and pepper. Add mayonnaise to the potato mixture and stir gently, incorporating all of the ingredients.
