How to Make a Classic Blue Plate Special for an Easy Dinner

But you can make a classic and delicious hot meatloaf sandwich with gravy, mashed potatoes, and green beans - think 1950's Blue Plate Special - in a little over an hour from start to finish with only 5 minutes in the kitchen.

To be honest with you sometimes I find it hard to come up with dinner options that are quick, easy, and delicious but today, I have a wonderful meal to share with you that quite literally takes less than 5 minutes of total kitchen time and it reminds me of a 1950's Blue Plate Special.
Have you ever eaten at a diner and had a meal like this? It's a hot meatloaf sandwich and mashed potatoes topped with gravy and green beans on the side. It's one of my favorites. I remember meals like this when we ate out while on vacation. Oh, how I loved those times with my parents.
I know how valuable family time is and how quickly it goes by and that's why I try to make a point to spend as much time with my kids as possible. My oldest sons aren't around as often now, but....
this guy.....he's still around a lot and I value every moment with him....and that's why I love meals like this. I can plan a quick, easy, and delicious meal with minimal kitchen time and more Max time!
I chose On-Cor Home Style Gravy & Meatloaf Slices for a lot of reasons including convenience for one of those nights when I just have too much to do, taste, NO added MSG, and with the new packaging, I can easily see what I'm feeding my family right on the front of the box.
While our On-Cor Entrée was in the oven, Max and I talked about a new book he was reading, which was a gift from a dear friend, and I got some laundry folded. I call that a win and when dinner was ready his older two brothers showed up (talk about perfect timing) so it also turned out to be a fun family meal.

Hot Meatloaf Sandwich, Mashed Potatoes, and Gravy with a Side of Green Beans
Ingredients:
On-Cor Home Style Gravy and Meat Slices - I bought two boxes which was more than enough for our family of 5
White bread (yes, white....we want this to be as authentic as possible but you can substitute if you like)
Instant Mashed Potatoes
Green Beans
Preheat oven and follow directions on the package.
10 minutes before the meatloaf slices were done I steamed my green beans and made the packaged mashed potatoes.

Oh my goodness! Mary Beth, that is comfort food at her finest! Everything looks SO delicious! And yes... white bread is a must for that old-fashioned flavor. I remember Blue Plate Specials as a child... usually in those mom and pop kinds of restaurants with home-cooked meals. The ones that don't change with the times but remain small-town favorites.
I am so glad you remember these types of meals as well! They were a favorite of mine when I was younger and still are. π
I like On-Cor Macaroni & Cheese. I would use the extra time to play outside with my kids.

My favorite are the barbecued pork riblets, which we use to make homemade McRibs. The sauce they have is good enough to drink. I would use the extra time to rake the leaves, since they are starting to pile up!!

We like their bbq ribs. I would spend my time catching up on my fave tv shows.
