Apple Spice Cake
Moist and Delicious Apple Spice Cake
Fall is definitely in the air and this is the perfect time to buy some fresh apples for eating and
Ingredients:
2 cups all-purpose flour
2 tsp. pumpkin
1 tsp.
Β½ tsp.
Β½ tsp. salt
Β½ cup unsalted butter at room temperature
ΒΎ cup granulated sugar
2 large eggs
ΒΌ cup molasses
Β½ cup sour cream
2 apples ~ 1 Golden Delicious and 1 Granny Smith ~ peeled and sliced ΒΌ inch thick
Whipped cream topping or ice cream
Heat oven to 350 degrees F. Coat an 8-inch square pan with butter or coconut oil and line with parchment paper leaving a 2 inch overhang on two sides. Coat paper with your oil or butter.
In a large bowl, whisk together the flour, pumpkin
Use an electric mixer to beat together the butter and sugar until light and fluffy and then beat in eggs one at a time. Add the molasses and sour cream.
Reduce the mixer speed to low and gradually add the flour mixture. Gently fold in the apples.
Pour the batter into your pan and bake until a wooden pick inserted into the center comes out clean, 55 to 60 minutes.
Let cool 15 minutes and remove from pan and place on wire rack to cool completely.
Serve with whipped cream or ice cream if desired.
