Moist and Delicious Apple Spice Cake

Fall is definitely in the air and this is the perfect time to buy some fresh apples for eating and baking.  I’ve  entered into my cold-weather nesting mode and have been baking up a storm.  I recently made this Apple Spice Cake and it turned out so great I wanted to share it with you.

Apple Spice Cake 4

2 cups all-purpose flour

2 tsp. pumpkin pie spice {if you don’t have this on hand check out my Make It Yourself Pumpkin Pie Spice Recipe}

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 cup unsalted butter at room temperature

3/4 cup granulated sugar

2 large eggs

1/4 cup molasses

1/2 cup sour cream

2 apples ~ 1 Golden Delicious and 1 Granny Smith ~ peeled and sliced 1/4 inch thick

Whipped cream topping or ice cream

Heat oven to 350 degrees F. Coat an 8-inch square pan with butter or coconut oil and line with parchment paper leaving a 2 inch overhang on two sides.  Coat paper with your oil or butter.

In a large bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda and salt.

Use an electric mixer to beat together the butter and sugar until light and fluffy and then beat in eggs one at a time.  Add the molasses and sour cream.
