Apple Spice Cake

Moist and Delicious Apple Spice Cake

Fall is definitely in the air and this is the perfect time to buy some fresh apples for eating and baking.  I've  entered into my cold-weather nesting mode and have been baking up a storm.  I recently made this Apple Spice Cake and it turned out so great I wanted to share it with you.

Ingredients:

2 cups all-purpose flour

2 tsp. pumpkin pie spice {if you don't have this on hand check out my Make It Yourself Pumpkin Pie Spice Recipe}

1 tsp. baking powder

Β½ tsp. baking soda

Β½ tsp. salt

Β½ cup unsalted butter at room temperature

ΒΎ cup granulated sugar

2 large eggs 

ΒΌ cup molasses

Β½ cup sour cream

2 apples ~ 1 Golden Delicious and 1 Granny Smith ~ peeled and sliced ΒΌ inch thick

Whipped cream topping or ice cream

Heat oven to 350 degrees F. Coat an 8-inch square pan with butter or coconut oil and line with parchment paper leaving a 2 inch overhang on two sides.  Coat paper with your oil or butter.  

In a large bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda and salt.

Use an electric mixer to beat together the butter and sugar until light and fluffy and then beat in eggs one at a time.  Add the molasses and sour cream.

Reduce the mixer speed to low and gradually add the flour mixture. Gently fold in the apples.

Pour the batter into your pan and bake until a wooden pick inserted into the center comes out clean, 55 to 60 minutes.

Let cool 15 minutes and remove from pan and place on wire rack to cool completely.

Serve with whipped cream or ice cream if desired.
