Strawberry Spinach Salad ~ Strawberry Vinaigrette
Spring is in the air and fresh fruits and vegetables are coming to market. I love seeing rich red strawberries in my refrigerator ~ perfect for eating alone or for using in a salad and salad dressing. Spinach is a great taste partner to strawberries and a good strawberry spinach salad is a refreshing treat. This recipe is quick, easy and easily adaptable. I used only spinach and strawberries for the salad and because of my boys' different allergies I didn't add almonds but if you have no allergy problems I urge you to include almonds or walnuts in the final 'toss' of this salad. The dressing is easy also....light, fresh and tasty!
Salad
1 bag of spinach {I didn't pay attention to the ounces/size..just a standard-sized bag}~ I purchased a 'ready to use' bag but prefer to wash my greens before using
1 container of strawberries {16 ounces} ~ use ¾ of the container for the salad saving ¼ for the vinaigrette
¼ cup blanched and slivered almonds
feta cheese ~ I have this available to put on individually {some like it...some don't}
{use more or less of the above according to your preferences}
1. Rinse, hull and slice strawberries.
2. Rinse spinach and place in salad spinner to get rid of the excess moisture.
3. Gently toss together strawberries, spinach and almonds.
Strawberry Vinaigrette
1 cup olive oil
4 ounces fresh strawberries, rinsed, hulled and halved
2 tablespoons balsamic vinegar
½ teaspoon salt
¼ teaspoon white sugar
In a blender or food processor mix all ingredients and blend until smooth.
Serve over strawberry spinach salad and enjoy!
