Cake Mix Brownies and Chocolate Chip Cookie Cake

My 'Best Cupcakes' are a mixture of brownies and chocolate chip cookies...easy and delicious, but I wanted something with a little more of a cake-like texture and brownie flavor.  This recipe really hit the mark for what I was looking for.  It was easy and quick to make with a cake mix and cookie mix as the base and just a few tweaks to the cake mix.

Ingredients

1 box {18 ¼ ounces} chocolate cake mix

½ cup butter {salted} at room temperature

¼ cup light brown sugar

2 large eggs

1 teaspoon vanilla

1 package of chocolate chip cookie mix

1.  Preheat oven to 375°.

2.  Grease a 13 x 9 baking pan.  

3.  In a large mixing bowl using an electric mixer beat all above ingredients ~ with the exception of the chocolate chip cookie mix ~ until smooth.  This will be a thick batter.  

4.  Spread mixture into baking dish.

5.  Prepare the package of chocolate chip cookie mix according to package directions and place a heaping tablespoon of the cookies randomly on top of the brownie~cake.  

6.  Bake for 30 minutes until no longer 'jiggly'.

7.  Cool completely and enjoy!
