2 Ingredient Pumpkin Muffins

Pumpkin season is here and that means all things pumpkin and the delicious fall flavors we all crave. If you're looking for a lighter way to make pumpkin spice muffins this recipe is a real game changer.

It all starts with a box of spice cake mix. I recommend spice cake mix since it's made with cinnamon, nutmeg, and allspice so there's no need to add any additional pumpkin pie spice but you can also use other cake mix flavors and I've included a list in the 'substitutions' section of this post.

The only other ingredient you'll be using is canned pumpkin, not pumpkin pie filling but regular good ole pumpkin puree.

This was inspired by my 2 Ingredient Pumpkin Cake Recipe and my pumpkin biscotti recipe (made with a muffin mix). You can find all of my pumpkin recipes here.

I've seen other recipes that mention adding a frosting, like this cream cheese frosting, but to keep it on the healthier side I opted to keep the muffin tops bare!

Pumpkin Spice Cake Dry Cake Mix in a bowl

In a large bowl, using a hand mixer (my go-to can be found here) to mix together the dry cake mix and the entire can of pure pumpkin puree until smooth. Don't follow the instructions on the box!

I like to use a wooden spoon to start the mixing process and then switch to my electric mixer to do it a bit more quickly than just mixing and stirring alone. Please note that this is a thick batter, not a light and fluffy batter that you may be familiar with.

Spoon batter into a muffin pan (this is my favorite) that has first been sprayed nonstick cooking spray. You can also use muffin liners or cupcake liners also sprayed with cooking spray and placed into the wells of the muffin pan.

Bake in preheated oven for a total baking time of 18-20 minutes at 375 degrees F or until a toothpick inserted in the center of a test muffin comes out clean.

Place on cooling rake and allow to cool to room temperature or enjoy while still slightly warm!

🍴Substitutions

  • Easy Pumpkin Cake - instead of making muffins you can easily make this a cake instead following the simple directions that can be found in this post.
  • This can easily be made into a mini muffins recipe - using a mini muffin tin, once again divide batter equally between each muffin cup and bake for 8 to 10 minutes at 375 degrees Fahrenheit.
  • Other flavor cake mixes such as carrot cake mix, a box of yellow cake mix, or chocolate cake mix can be used for simple cake mix muffins. Chocolate pumpkin muffins are my second favorite option.

📖 Variations

  • Chocolate Chip- gently stir in ½ cup of chocolate chips to the batter before baking. I sprinkled a few semi-sweet chocolate chips on several of the muffins because my sons asked me, too.
  • Craisins, raisins, nuts - add ½ cup to batter and give it a little stir before baking.

  • Store in an airtight container on the counter for up to 3 days or in the refrigerator for up to 7 days.
  • This cake mix recipe can also be stored in the freezer, in an airtight container, for up to 3 months. If frozen, take out a muffin and leave it on the countertop for a bit to thaw or place it in the microwave for 15 to 20 seconds.

  • 15.25 ounces spice cake mix I used Betty Crocker Super Moist Spice Cake Mix
  • 15 ounces pumpkin puree Libby's 100% pumpkin

Instructions

  • Preheat oven to 375 °F
    15.25 ounces spice cake mix, 15 ounces pumpkin puree
  • Spray muffin tin with baking spray or cooking spray.
