Best Banana Sheet Cake Recipe
If you're looking for a big cake with a delicious blend of flavors it's time to do a happy dance because you are at the right place. This is the best banana sheet cake recipe I have ever tasted.
It's easy to make and can be topped with brown butter frosting or a rich cream cheese frosting and because it's a sheet cake, it's perfect for large gatherings.
This easy banana cake is the perfect recipe to make any time you have some extra ripe bananas in the house and don't feel like making the usual, albeit delicious, banana bread (this is my favorite recipe!). It's packed with just the right amount of banana flavor and may be the moistest cake you've ever made.

🍌Ingredients
- granulated sugar
- sour cream
- unsalted butter
- large eggs
- overripe bananas
- vanilla extract
- all purpose flour
- baking soda
- salt
Browned Butter Frosting
- butter
- powdered sugar
- vanilla extract
- milk or half and half

Homemade Cream Cheese Frosting
- 1 8 ounce package cream cheese, softened
- ½ cup butter, softened
- 2 teaspoon vanilla extract
- 3 ¾ cups confectioners' sugar
📋Instructions

- Heat oven to 375 degrees.
- Grease and flour 10"x15" jelly roll pan.
- Place first four ingredients in a large mixing bowl and use an electric mixer with the paddle attachment to beat on high speed until creamy.
- Blend in mashed bananas and vanilla and using paddle attachment to beat on medium speed for one minute.
- In a small bowl stir together flour,
baking soda and salt. - Add the dry ingredients flour mixture to banana mixture and blend on low speed for one additional minute.
- Spread banana cake batter in prepared pan.
- Bake time of 20 to 25 minutes until golden brown.
- Remove from oven and place pan on wire rack and frost the top of the cake with frosting once it has reached room temperature.
Browned Butter Frosting
- Heat butter in saucepan over medium heat past the melting point until it is boiling and light brown.
- Remove from the heat and immediately add the remaining ingredients. This should be thicker than a glaze, and thinner than frosting.
- Smooth over the top of the banana sheet cake immediately.
- Serve!
Cream Cheese Frosting
In a mixing bowl, beat cream cheese, butter and vanilla. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost cake. Store in the refrigerator.

📖 Variations
- I've given the recipe for browned butter frosting and cream cheese icing but no matter which kind of frosting you use, this cake is delicious. p.s. You could also use a caramel frosting for an additional layer of flavor.
- Is chocolate your thing? If so, you can add 1 cup of chocolate chips as the last step using a rubber spatula to gently fold them into the batter before pouring it into the jelly roll pan.
- Top with sliced bananas and nuts if desired.

Cover cake with foil or plastic wrap and store in the refrigerator. To keep the covering from sticking to the icing, stick toothpicks at regular intervals and then cover with foil or plastic wrap. It's an old trick but it works great!

- 1 cup sour cream

- 1 ¾ cups ripe bananas 3 or 4 ripe bananas mashed
- 2 teaspoons vanilla

- 4 cups powdered sugar
- 1 ½ teaspoons vanilla
- 3 tablespoon milk can use milk or half and half

As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
In the supplies it says you need a half sheet pan but then it says to use a 10 x 15 pan which is not the same size as the link you provide to the pan.

Thank you for letting me know about the discrepancy. I updated the post to reflect the correct pan size which is 10 x 15.
This is a really good and easy recipe. I doubled the recipe and put it into a sheet cake pan instead of a jelly roll pan for a thicker cake. I made a cream cheese frosting and added cinnamon to the frosting. Was really good with the banana flavored cake. Will make this again.
