Whipped Cream and Cream Cheese Frosting

I made some white batter cupcakes this weekend and wanted to top them off with some white icing.  Something simple but not my usual favorite Buttercream Frosting {my mom's recipe which is absolute fluffy perfection}.  Whipped cream seemed to easy.....cream cheese frosting too blah but combining them both produced the recipe below which is light and tasty!

Whipped Cream and Cream Cheese Frosting

Ingredients

  • 8 ounce package of cream cheese ~ softened
  • ½ cup white sugar
  • 1 ½ teaspoon vanilla extract
  • 2 cups whipping cream

Instructions

  • Combine softened cream cheese, sugar and vanilla extract in mixer and beat on medium speed until fully blended and smooth.
  • With mixer on medium high speed slowly add the whipping cream stopping the mixer to scrape the sides occasionally.
  • Whip until stiff peaks form. The peaks will be slightly more substantial than a normal whipped cream peak.

Notes

I like to keep my mixing bowl and whisk attachment or beater{s} in the freezer for about 30 minutes before making any recipe with whipping cream. This helps everything to whip better and quicker.

As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
