Brownie Pops

I needed to make something quick and easy for a bake sale but wanted it to be different .... something that would maybe sort of stand out..... I came up with these and made them with items I had on hand....brownie mix, chocolate chips, shortening, jimmies etc.,  and craft sticks.  I'm sorry the pictures aren't better....I made these late at night and well....I was foggy so presentation flew out of my head!

Directions:

Line an 8 or 9 inch square pan with foil so that it extends over the sides of the pan and spray with cooking spray.

Make either a brownie mix or your favorite brownie recipe according to directions/bake accordingly.

Cool completely for at least 1 hour.

Place the brownie tray {covered}, in the freezer for 30 minutes.

Remove brownies from pan by lifting foil; remove/peel foil from the brownies.

Cut brownies into 4 x 4 rows for a total of 16 brownies.

Carefully insert craft stick into center bottom of each brownie.

Place on cookie sheet and freeze for 1 hour.

Melt chocolate chips {4 ounces of chocolate chips and 1 ½ teaspoons shortening} in microwave safe bowl uncovered on high for approximately 1 minute ~ remove and stir until smooth.  If necessary microwave in 5 second increments until completely smooth and melted.

Dip the top portion of the brownie pops into the chocolate, lay on a wax paper lined cookie sheet and sprinkle with jimmies/candies/etc.  I made two at a time as they dried too quickly to do more than that.
