Easy Lipton Onion Soup Mix Pot Roast Recipe

I grew up loving my mom's Lipton onion soup pot roast recipe. Sunday dinners were a blend of wonderful aromas, the beefy scent mingled with the earthy smell of baby carrots and potatoes, all mingling under the lid of her well-used Dutch oven.

I could hardly wait to gather around the table, where a serving platter boasted the perfect pot roast, fork tender, each slice promising a burst of rich flavor.

While I attempted to recreate this classic pot roast for our family's Sunday dinner, I am reminded that this isn't just about revisiting a favorite recipe. It's about rekindling those dinner time memories and, perhaps, creating new ones with my family.

Ingredients

All of the ingredients for this easy recipe are available at your local grocery store. Starting with a boneless beef chuck roast guarantees a tender roast, rich in flavor and perfect for slow cooking. A packet of dry onion soup mix is non-negotiable; it's the heart and soul of the dish, infusing simple ingredients with unmatched depth. Adding potatoes (Yukon Gold are my favorite for this recipe) and baby carrots transforms the meal into a one-pot wonder and I always like to add at least one sliced onion for extra flavor. Don’t forget a cup of water, or  beef broth, whisked together with a can of cream of mushroom soup to create a savory cooking liquid.

Instructions

I had always thought making this tender pot roast would be more difficult but this easy pot roast recipe brims with simplicity.

Peel and thinly slice onion. 

Cube carrots or cut in half lengthwise if using baby carrots. Place in bottom of a roasting pan.

Peel and cube potatoes. 

Place roast on top of the onion and carrots. Add potatoes around the roast.

Whisk together Lipton soup mix, water, and one can of Cream of mushroom soup. Pour over the top of the roast and vegetables.

Place into oven at 325 degree oven and bake for 3 hours.

Serving and Storing

I like to place the sliced tender roast in the center of the serving platter and placing the fork-tender potatoes and baby carrots around the sides of the roast creating the perfect ultimate comfort food spread. For a complete meal, serve with a vibrant green salad and if you'd like another vegetable, green beans complements a good pot roast perfectly!  

If you want to store leftovers allow the pot roast to come to room temperature and then store in an airtight container. Eat within 3 to 4 days.

Slow Cooker Pot Roast Recipe - Crock Pot Pot Roast

Follow all of the steps above placing the ingredients in bottom of the slow cooker. Cover the crock pot and let it work its magic over the next 8-10 hours on low or 5 to 6 hours on high. I prefer the 8-10 hour cook time because it yields the best pot roast even if it takes a little more cooking time!

Ingredients

  • 4 pounds chuck roast
  • 8 ounces baby carrots you can use larger carrots as well, just peel and cube
  • 2 pounds Yukon gold potatoes peel and cube into 1 ½ inch pieces
  • 1 onion sliced
  • 10.5 ounce Cream of Mushroom Soup Campbells
  • 1 ounce Lipton Onion Soup Mix 1 packet
  • 1 cup water can use beef broth if preferred

Instructions

  • Preheat oven to 325°.
  • Peel and slice onion.
    1 onion
  • Cube carrots or cut in half lengthwise if using baby carrots.
    8 ounces baby carrots
  • Peel and cube potatoes.
    2 pounds Yukon gold potatoes
  • Layer onion slices on the bottom of a Dutch oven or casserole with lid. Top with carrots and chuck roast. Add cubed potatoes around the roast.
    4 pounds chuck roast
  • Whisk together Lipton soup mix, water, and one can of Cream of mushroom soup. Pour over the top of the roast and vegetables.
    10.5 ounce Cream of Mushroom Soup, 1 ounce Lipton Onion Soup Mix, 1 cup water
  • Cover with lid and bake for 3 hours.
