Classic meatloaf made with fresh ground beef, onions, oatmeal and breadcrumbs is one of my family’s favorite dinners. With the heat we’ve been experiencing and everyone’s busy schedules, my new favorite and easy way to make it is in the crockpot. You can get everything ready the night before, refrigerate the meatloaf until the next day and then pop it into the crockpot and have this delicious home cooked main dish crockpot meatloaf in just a few hours.
Crockpot Meatloaf Recipe
1 1/2 pounds lean ground beef
1 cup whole or 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/2 cup bread crumbs and 1/2 cup oatmeal – you can do 1 cup of either if you prefer
1 small onion finely choppedTopping:
1/2 cup ketchup
1 tablespoon brown sugar
Line slow cooker with aluminum foil and spray with cooking spray.
In a large mixing bowl combine all ingredients with the exception of the topping.
Shape mixture into a loaf and place in the center of your slow cooker.
Combine ketchup and brown sugar and spread over the top of the meatloaf.
Cover and cook on low setting 3 to 4 hours until a meat thermometer or probe registers 160°F.
Remove meatloaf from slow cooker and place on a platter. Allow to set for 5 to 10 minutes. Slice and serve!
Our favorite side dish for this meatloaf recipe is mashed potatoes! I am normally a gravy girl but for this recipe, the ketchup topping adds such a nice flavor that I prefer it over gravy.
