I almost always make a ham for Christmas day dinner and for Easter. While I love to buy a big ham sometimes, using up all the leftovers can be challenging but that's why I love this easy ham salad recipe and this recipe for Instant Pot Ham and Cabbage. Both recipes are delicious and ready in no time!

- cooked chopped ham (this is a great way to use up leftover holiday ham)
- hard boiled eggs
- chopped onion
- sweet pickle relish
- mayonnaise or Miracle Whip
- mustard

🔪 Instructions

- Cube cooked ham.
- Place in the work bowl of a blender or food processor.
- Mix mayonnaise, mustard, and sweet relish in bowl and add to blender.
- Add hard boiled eggs and chopped onion.
- Pulse the ham mixture until desired consistency scraping down sides of bowl as necessary.
This is a delicious ham salad spread for sandwiches or to top crackers!
Hint: For a grinded meat consistency, use a Kitchen Aid mixer with a meat grinder attachment.

🍱Storage
For safety and quality ham salad should be refrigerated in an airtight container and will last for 3 to 5 days in the refrigerator.
Freshly made ham salad can be frozen in a freezer-safe plastic storage container. Allow a ½ inch headspace to allow for expansion.
Freeze the ham salad in a freezer for one to two months and thaw in refrigerator when you're ready to eat it. Note that the consistency and texture of the ham salad will change after being frozen but will still be edible.

This looks exactly like what I grew up with - and haven't had in years!
The meat grinder seems to be the missing ingredient; I could never figure out how to get the ham small enough to make it like I remembered.
Now I'm hungry. : )
My husbands mom made this whenever they went on a picnic but without the eggs. I will try this with the eggs and I think he'll be thrilled. Would be great on a croissant don't you think?
