Dinner in 15 Minutes - Fresh Lemon Cream Pasta
Pasta is one of my favorite meal staples. My family does NOT share my love of pasta so when I do make it I try to make something different, something special and something new. When I made this one I knew it had a shot at being well received. It had a hint of lemon, not so much that it was overwhelming but enough that it lightened up the cream sauce, and it also had fresh Parmesan. With that last ingredient I can never go wrong. Not only did everyone like it but it looked pretty (love that yellow striped bow tie pasta) and it was ready from start to finish in under 15 minutes.
You can use any of your favorite pastas for this such as linguine, angel hair pasta, rotini, etc., but when I saw the lemon bow ties at Aldi's I had to buy a bag and that was my inspiration for this recipe.
Fresh Lemon Cream Pasta
Ingredients:
1-16 ounce package of pasta {cook according to directions on package}
1 lemon
1 onion {I only had red onions available but would recommend a sweet onion if you have that!}
1 clove of fresh garlic
2 cups of half and half
Block of fresh Parmesan cheese
Salt and pepper to taste

2. Wash the lemon and grate the zest adding it to the sauteed onion and garlic. Squeeze the juice from the lemon into the sauteed mixture as well.
3. Quickly add the half and half stirring to prevent clumping.
4. Add the drained pasta and mix well. Season to taste.
5. Slice the Parmesan, top the pasta, and serve!
