Fresh Rosemary and Grape Focaccia

Autumn is approaching quicker than I could have imagined.  Even though I really don't like to see summer come to an end this is the time of year that I love to start baking and cooking.  Something about a chill in the air inspires me to begin the process of nesting again and this Fresh Rosemary and Grape Focaccia is the perfect way to kick off my Autumn baking.

 Fresh Rosemary and Grape Focaccia

Fresh Rosemary and Grape Focaccia ~ cupcakesandcrinoline.com

Ingredients:

1 fresh refrigerated pizza dough

Extra Virgin olive oil 

Β½ cup fresh shredded Parmesan cheese

2 teaspoons fresh rosemary leaves 

1 large bunch of seedless grapes 

Directions:

1.  Preheat oven to 425º.  I prefer to use a baking stone for my pizzas but you can also use a round baking pan.  If using the pan coat with olive oil first so that the pizza crust does not stick to your pan.  This is not necessary if using the stone.  

2.  Stretch the pizza dough to fit your stone or pan.

3.  Brush olive oil over the dough going all the way to the edges.

4.   Cut the fresh rosemary into small pieces and sprinkle over the dough.

5.  Sprinkle fresh Parmesan over the rosemary and arrange grapes on top of this pressing into the dough just slightly so they stay in place.  

6.  Bake 18 to 25 minutes until the focaccia is golden brown around the edges.  Let cool before serving.  The grapes will be piping hot inside so be sure to wait to eat!
