Green Beans with Bacon and Some Potatoes Thrown In

Are you a potato person? I am big time.  Add green beans and bacon and you have my attention! I love potatoes just about any way you can have them from homemade mashed potatoes to home fries to crispy potato chips I am a potato junkie and that's why I am so thrilled to have you here for today's post in which I share a recipe for Hot Bacon Potato Salad with Green Beans.

This recipe is easy to make, which is a must for me, and the ingredients are easily available.

Hot Bacon Potato Salad with Green Beans and a Dijon Mustard DressingFresh green beans and fingerling potatoesIngredients:

3 lb. fingerling potatoes washed and cut in half lengthwise

2 lb. fresh green beans, ends snapped off

Ingredients, hot bacon potato salad dressing

5 strips of fully cooked bacon, chopped½ cup white wine vinegar

1 tbsp. honey (I used raw but you can use any kind)

1 tbsp. Dijon mustard

1 tsp. salt

1 tsp. pepper

½ cup extra virgin olive oil

Directions:

  1. Boil potatoes for 20 minutes or until tender. Drain.
  2. Cook green beans in boiling water until crisp-tender, 5 to 8 minutes.  Remove from heat and drain.
  3. Whisk together vinegar, honey, Dijon mustard, salt and pepper and slowly add olive oil whisking constantly until smooth.
  4. Pour vinegar mixture over potatoes just before serving and sprinkle with bacon.  

Serve warm or cover and chill until ready to serve.

This is honestly so good! My family loved it.  We had some leftover (I always double recipes because my guys are big eaters) and the next day I heated some up for lunch.  It was one of my favorite lunches in a while.

Hot Bacon Potato Salad with Green Beans and a Dijon Mustard Dressing

Ingredients
