Last weekend I was baking an Apple Spice Cake.  I was all set to start and realized I didn't have any pumpkin pie spice.  I didn't have time to run out and buy some so I made my own.  

I did some research to determine what exactly was in pumpkin pie spice and found that it could vary slight but the basic ingredients remained the same.  

It took less than 5 minutes to make and was a fraction of the cost of the store-bought versions.

Can Cinnamon be Substituted for All Spice?

Yes, it can.

Cinnamon and allspice are spices often used in sweet dishes such as cakes, cookies or brownies. Their flavors vary greatly despite complementing each other well in many recipes; cinnamon has a more mellow flavor while all-spice carries stronger spiciness which can sometimes overpower ingredients if not careful when cooking with them.

Ingredients:

2 tsp. ginger

2 tsp. ground nutmeg 

1 ½ tsp. cinnamon {can substitute 1 ½ tsp. allspice}

1 ½ tsp. ground cloves

Directions:

Mix all above ingredients well and store in an airtight container. 

*Note:  traditional pumpkin pie spice usually contains allspice but I didn't have any on hand and found the cinnamon to be a more than acceptable {and far less expensive} alternative.
