No-Bake NILLA Wafer Cheesecakes

When the warmer months of summer are finally here, I enjoy making no-bake desserts. The kind of desserts that I don't have to slave over yet look and taste delicious. Today, I'm sharing one of my new favorite recipes with you for no-bake NILLA wafer cheesecakes with fresh fruit and they are so tasty, you'll want them year round.

I found everything I needed, including traditional NILLA Wafers and Lemon NILLA Wafers, at my local Walmart.

Keep the House Cool With This No-Bake Fresh Fruit Dessert

There aren't many ingredients and using NILLA Wafers guarantees it's easy to whip up a party in no time making it the perfect quick, no-bake solution for the steamy hot summer months ahead.

No-Bake NILLA Wafer Cheesecakes

Ingredients:

20 Lemon NILLA Wafers crushed - I used a food processor for this but you could also place them in a plastic bag with a seal and smoosh them up using a rolling pin

NILLA Wafers for garnish

1 small container of raspberries

1 teaspoon sugar

1 small container of blueberries

1 8-ounce container of Mascarpone

Directions:

Spoon a thick coating of the crushed Lemon NILLA Wafers into the bottom of a serving dish. I used some pretty champagne glasses that I never use and each glass will serve two so this is a nice dessert to share but you could also use 4 containers of your choice.

Top crushed Lemon NILLA Wafers with one-fourth of the mascarpone.

* Puree raspberries and add 1 teaspoon sugar, mix well.

Top Mascarpone with the pureed raspberry mixture.

Top with the remaining mascarpone and the remaining crushed Lemon NILLA Wafers.

Add blueberries.

Garnish with NILLA Wafers.

Now, wasn't that almost too easy?

This easily serves 4 and you could make the portions smaller to serve more or easily double or triple the recipe for a larger gathering.
