Baked Apple Pancake
When it’s a special day for someone you love ~ birthdays, Mother’s Day, Father’s Day, your anniversary ~ whatever it may be it’s always a great way to start the day with breakfast in bed. This recipe is perfect for just that purpose or any day you’re looking for an easy and delicious breakfast.

I remember when my oldest son was only 11, I was a single Mom and afraid….not sure of so many things, missing my own Mom who had passed away 9 years earlier, and my JR woke me up (along with his then 2-year-old brother) to breakfast in bed. Eggs (slightly burnt), toast (sorta burnt) and coffee were on a cutting board (the tray). They made a card for me and came into my room with huge smiles across their faces. That morning will always be one of my favorite memories as a Mom and to this day makes me smile from ear-to-ear! So, whether you surprise Mom with this recipe or something else, you’ll make her happy.

A moist and delicious baked apple pancake - perfect for breakfast or brunch!

- 1/4 cup butter
- 4 to 5 apples peeled, cored and thinly sliced
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 6 eggs, beaten
- 1 cup all-purpose flour
- 1 cup milk
- 1/2 teaspoon salt
- maple syrup ~ optional
- Preheat oven to 375 degrees. In a 10 1/2 inch cast-iron skillet melt the butter.
- Add apple slices, sugar and cinnamon and saute until apples begin to soften.
- In a mixing bowl, blend together eggs, flour, milk and salt.
- Pour the above mixture over apples in skillet.
- Bake at 375 degrees for 30 minutes.
- Serve with maple syrup if desired.
One more thing to make this breakfast a success ~ don’t forget the coffee! If you know me at all you know I love good coffee. When I used to drive my oldest son to his first job some mornings I was up at 5:30 a.m. to get him there by 6 o’clock. Thankfully, across the street from where he worked there was a Dunkin’ Donuts.
I had my handy dandy refill cup and on those mornings I would always get a refill but now you can find Dunkin’ Donuts® Coffee K-Cup® Pods in the coffee aisle at your grocery store ~ woot! My favorite is the Original Blend but there is also Dunkin’ Decaf, French Vanilla, Hazelnut and Dunkin’ Donuts Bakery Series® Chocolate Glazed Donut flavors. Me (or my older kids) can just pop a K-Cup pod into our Keurig and it’s ready in no time. It’s also great to have extra on hand for summer entertaining…they make a mean iced coffee!
