Easy to Make Dessert ~ Just 4 Ingredients

Tapioca Pudding with Caramel, Whipped Topping and Fresh Toasted Coconut Fresh toasted coconut served atop whipped cream, caramel sauce and tapioca pudding ~ cupcakesandcrinoline.com

I spent the day in the kitchen baking (it was 90 degrees outside...I was miserable-I don't plan these things very well) ~ the family and I had dinner....and then when I gave them a dessert choice they picked the little beauty above.  I almost wanted to pretend I was sweating and that making it was a workout but honesty is the best policy so I let my family in on the truth...that this only takes 5 minutes (not even!!) to make.  They seemed unphased by this pronouncement ~ I even did a little ta-dah but they just went and got spoons....boys!

If you're not sure how to make toasted coconut here you go ~

Buy a bag of sweetened flaked coconut

Preheat oven to 350°.  Spread the coconut on a cookie sheet and bake for 7 minutes occasionally stirring the coconut.  Remove from oven and sprinkle away ~ my boys and husband ate it right off the tray...they sorta kinda liked it!

Now for a quick survey ~ When you eat tapioca pudding {preferably Kozy Shack - it's made with real tapioca pearls} do you like to "push" the pearls out through your teeth causing them to burst???? Okay....I do.  I did when I was a kid and I still do now.  I usually get a little on my chin but it's fun and we all need a little fun now and then, now don't we?
