I seem to have a go-to list of recipes....the recipes I make over and over again and while that's convenient sometimes I work on brainstorming for a new recipe ~ something that's delicious and easy.  I used to think that the more ingredients the better.....back when I had time on my hands....but now my goal is to be a ninja in the kitchen....in and out as quickly as possible.  I tried something new the other day.  I was working on different combinations and then bam....this came to me.  I tried it on my family and they  loved it (I did too) so I knew it was a  hit.

It's a 4-Ingredient Appetizer that you can make in less than 5 minutes and all of the ingredients are readily available ~ after the recipe I'll share my inspiration  🙂

Chicken Salad Appetizer ~ Sweet and Salty, Smooth and Crunchy

Ingredients

  • Triscuit Crackers
  • Chicken Salad {Make a quick chicken salad ~ 1 can of chicken drained, 2 tablespoons mayonnaise, 1 stalk of fresh celery chopped ~ mix well}
  • Cheese of your choice ~ I chose Swiss
  • Grapes

Instructions

  • Cut cheese to size and place on top of the Triscuit crackers
  • Top with 1 tablespoon chicken salad
  • Slice a grape and fan out over top

As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.

So now for my inspiration! I have three sons.  One of my goals as a mother is that they be self-sufficient so that whether they are out on their own or whether they are married with children they can find their way around the kitchen (and laundry room, etc.).  One of the first things I taught the older two to make was chicken salad.  It was easy and something that they could add their own spin to.  My middle son makes a kick-booty chicken salad.  We've had it for lunches.....and dinners.  Sometimes I can't get enough of it.  When I was doing my brainstorming for this appetizer it hit me....chicken salad.

Since we already love Triscuit crackers (they go with everything and are so good alone...sometimes I just put a neat little stack next to my keyboard for snacking while I'm working) I knew I wanted to add the chicken salad to that but I wanted a bit more...so I added Swiss cheese and grapes.  Grapes are the perfect sweet compliment to the Sea Salt used in the making of the Triscuit crackers and blends well with the smooth taste of the chicken salad and cheese.
