Curb Carb Cravings With Banana Egg Pancakes
Curb carb cravings with these 2-ingredient banana egg pancakes. Delicious and filling and totally okay for gluten-free and Paleo diets and lifestyles.
A few weeks ago I shared a post about an easy way to increase your water intake with fruit-infused ice cubes. In that post, I mentioned that I was attempting to lose weight. My journey continues and today I'm sharing something I have found to be really helpful for me in the morning.
Do any of you wake up and NOT want to eat? I like to wake up, drink 2 cups of coffee, have some quiet time, and then, maybe 3 hours later, eat. Well, from what I understand (okay, everything I've ever read about dieting) that's a no-no.
A few weeks ago my middle son was talking to my niece's husband about healthy eating and he, niece's husband, told middle son about banana pancakes. Now, niece's husband makes me laugh (he's hilarious at times) but he's also smart so I wasn't sure if he was kidding or serious (neither was my son) so we checked it out and sure enough, banana egg pancakes are a real thing. Since I had never heard of them and since Mr. Healthy recommended them middle son and I gave it a try and oh. my. goodness. they are so good and the best part, for me, is that they are easy to make even in my grumpy early morning state and I don't even have the slightest urge to add syrup PLUS they keep me full until lunch. I usually CRAVE, big time CRAVE, carbs for breakfast but this has helped me so much with that. In case you've never heard of them or have morning issues like me, I wanted to share them with you.
I like to use my cast iron skillet for
Ingredients:
1 ripe banana, mashed
2 eggs, slightly beaten
Directions:
Heat skillet with your fat (coconut oil, olive oil, etc.) as you would when making eggs.
Mash the banana in a bowl.
Mix eggs slightly.
Add mashed banana to eggs and mix together.
This is going to be lumpy, but that's okay.
Add banana egg mixture to hot skillet and flip when the bottom is set
Serve and enjoy!

- Add banana egg mixture to hot skillet and flip when the bottom is set cooking on the other side until golden brown.
As with any of my recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.

My husband and I started a low carb diet two weeks ago so these are perfect since I haven't had a pancake since then. Cannot wait to try them. Now just need to find a low carb syrup. 🙁
Hi Kari, The best to you and your hubby! As far as the syrup, I usually love syrup but the banana adds enough sweetness to these that I haven't had to use it. Let me know if you find a low-carb syrup you like or if you like them plain.

We eat eggs every morning and often I dice up red skin potatoes small and fry and then add eggs and cheese. In some ways, it's similar to your pancake because our portions are small, even on a luncheon plate. 😉 This also keeps me pretty satisfied until lunch and since red skin potatoes are low on the glycemic index that's a win and cheese is just extra tasty fat to feed my brain. I'm big on feeding my brain. LOL
