Fresh Cherry Dumplings

Recently I was given the opportunity to participate in {and enter!} the OXO Cherry Recipe Contest and was elated.  Not only did I get to try a new recipe ~ one from my Grandma's Cookbook

~ but I also had the opportunity to try a new kitchen gadget ~ the OXO Cherry Pitter.  I love to bake, try new recipes and try new gadgets ~ especially ones that work and OXO has always come through for me.

I started with some fresh cherries, my recipe and the OXO Cherry Pitter.

I have never used fresh cherries in a recipe before because I had always heard that pitting cherries was not an easy task....and I believed it...until now.  The OXO Cherry Pitter worked wonderfully and even after pitting several pounds of cherries {I pitted extra for easy snacks} my hands didn't hurt and were not fatigued at all.  The splatter shield worked great and cleanup was a breeze.

Fresh Cherry Dumplings

Ingredients

  • 4 cups fresh {or frozen} pitted cherries
  • ½ cup honey
  • ⅛ teaspoon vanilla extract
  • 1 tablespoon butter
  • ¾ cup light cream
  • 2 tablespoons sugar
  • 2 cups biscuit mix {think Bisquick}

Instructions

    1. Combine cherries, honey and vanilla extract in a deep saucepan.
    2. Heat to boiling.
    3. Add butter.
Dumplings:
  1. Add cream and sugar to biscuit mix; mix well.
  2. Drop dumplings by spoonfuls onto the bubbling cherry mixture.
  3. Cover tightly and steam about 20 minutes.

Notes

This is best served warm with ice cream or whipped cream.

A special thank you to OXO for sending me this awesome Cherry Pitter to try along with a Solid Stainless Steel ice cream scoop that is a wonderful upgrade from the ice cream scoop we had been using {can anyone say bent big spooon?!}.
