5 Super Simple Recipes Made With Leftover Ham
Ham is an easy and fairly inexpensive meal to make and the bonus leftovers are a great start for so many recipes!
Yesterday, I made a ham for Easter dinner and today I'll start using the leftovers for family meals.
Here are some of my favorite simple recipes for using up all that leftover ham.
Ham and Cauliflower Au Gratin Casserole
I love cauliflower in this recipe but you could also substitute broccoli and it would be just as delicious!
Ingredients:
3 cupcakes cooked ham, cubed
3 cups steamed cauliflower flowerets
1 red pepper, chopped (optional)
parsley (optional)
salt and pepper to taste
2 tablespoons flour
1 cup milk
1 cup shredded Cheddar cheese
½ cup sour cream
Directions:
Preheat oven to 350º. Lightly grease a casserole dish. Combine ham, cauliflower and chopped red pepper and place in casserole dish. Sprinkle with salt and pepper.
Melt butter in a saucepan and whisk in flour whisking until smooth and bubbly. Add milk, turn heat to medium and whisk until smooth and bubbly. Stir in cheese until melted. Stir in sour cream.
Pour sauce over top of ham and cauliflower mixture.
Bake for 30 to 40 minutes until heated through. Serves 6.
Ham, Cheddar, and Egg Burrito
1 tablespoon butter
4 eggs, beaten
1 ¼ cups cooked ham, diced
½ cup cheddar cheese, cubed
4 flour tortillas, warmed
Melt butter in a skillet and pour in eggs. Add ham and cheddar cheese.
Scramble eggs until desired consistency is reached. Remove from heat. Place egg mixture in a warmed tortilla and wrap tightly. Serve warm!
