Mediterranean Chicken Salad

Mediterranean Chicken Salad ~ A Microwave Meal
Summer is in full swing here and as I've said before....I do everything I can to NOT turn my oven on. I have a small house and when I turn on the oven it heats up (in a very bad way) the entire main living floor of the house and makes everyone, including me, miserable. We grill out when we can but when it's hot and rainy options for a hearty home-cooked meal can be slim but this entire meal is made in the microwave and tastes amazing!
My two older sons workout at the gym several days of the week, after dinner, and a meal like this keeps them full without being heavy and can be ready in less than 30 minutes.
This meal starts with Tyson® Grilled & Ready® Chicken Breast Fillets from Walmart - here they are after a few minutes in the microwave. Don't they look moist and delicious and those grill marks aren't just for looks...they taste like they're fresh off the grill.
I added a few more ingredients {see below} including Birds Eye Steamfresh® Protein Blends (also from Walmart). The Protein Blends come in several flavors and can compliment any meal and my older sons loved that they were a protein blend (gym guys like that sort of thing!).
INGREDIENTS:
1 package of Tyson® Grilled & Ready® Chicken Breast Fillets
2 packages Birds Eye Steamfresh® Protein Blends Italian Style
1 box of long grain and wild rice
1 cup grape tomatoes, halved
1 package crumbled feta cheese
spinach
Caesar Dressing (optional)
Prepare Tyson® Grilled & Ready® Chicken Breast Fillets, Steamfresh® Protein Blends Italian Style veggies and wild rice according to package directions in the microwave.
Cut chicken into slices.
Layer spinach beneath the chicken breast, add a serving or the Protein Blends, a serving or rice, some tomatoes and top in the center with feta cheese.
Top with Caesar dressing if desired (I'm a sauce/dressing kind of gal so I think it was the perfect addition to this easy meal).

This looks delicious! I love having some simple meal ideas for days when I'm too busy or tired to put much time into making dinner. And I loooove feta cheese and tomatoes, so this looks amazing!
