How-To Make Easy Homemade Chicken Soup. This is a great recipe for when you need some love in a pot or for when it's cold and you need to be warmed up. I also like to make a batch of this Chicken Soup for when I feel a cold coming on.
How-To Make Easy Homemade Chicken Soup
I often find myself scrambling to make something for dinner. I am NOT a planner 😉 I so wish I were. I wish I were one of those amazingly organize people who had their meals planned ahead for a month, a week, or heck, even a day. I was having one of those days recently where I really didn't know what I was going to make for dinner and then this recipe came to me (it literally did via e-mail!). I couldn't wait to try it. It was something I could make fairly quickly that was delicious, filling and even had veggies.
I went to my local Giant Eagle and bought Knorr Rice sides, some chicken breasts, and zucchini and I already had every else I needed on hand.
How-To Make Easy Homemade Chicken Soup
Ingredients:
1 tbsp. olive oil
3 medium red bell peppers, chopped
1 ¾ cups chopped onion
¾ cup zucchini, halved lengthwise, then sliced
½ cup chopped celery
¼ tsp. dried thyme leaves
2 cans (14.5 oz. each) reduced-sodium chicken broth
1 ½ cups water 1 package Knorr Rice Sides - Chicken flavor Broccoli
2 ⅓ cups shredded cooked boneless, skinless chicken breasts
Directions:
- Heat olive oil in 12-inch skillet over medium-high heat and cook vegetables and thyme, stirring occasionally, until vegetables are tender about 6 minutes.
- Add broth, water, and Knorr Rice Sides - Chicken flavor Broccoli. Bring to a boil. Reduce heat and cook covered 10 minutes or until rice is tender.
- Stir in chicken and serve immediately.
Because I have a family of 5 (4 males who eat everything in SIGHT) I doubled this recipe and they ate it all.
