Coffee ~ Cappuccino Ice Cream
I love coffee and soft serve ice cream.....it's hot....I'm hungry....it's time to make some ice cream!
I have an ice cream maker that I rarely use. You have to leave the freezer bowl in your freezer and I never seem to have room...but on this occasion I did have it frozen and ready just in case.
You can use ready mix cappuccino powder, instant espresso or instant coffee in this recipe; just toss in whichever you prefer.
Coffee Ice Cream
1 cup whole milk, well chilled
¾ cup granulated sugar
2 tablespoons instant espresso or coffee or cappuccino mix
2 cups heavy cream, well chilled
1 teaspoon vanilla extract
1. In a medium bowl use a whisk to combine the milk, granulated sugar and coffee/espresso or cappuccino powder until the sugar and coffee etc. are dissolved.
2. Stir in the heavy cream and vanilla.
3. Turn your ice cream maker on and pour the mixture into the freezer bowl....let mix until thickened 25 to 30 minutes. This will be the consistency of soft serve ice cream. If you prefer a harder ice cream freeze until firm, approximately 4 hours.

Mmm ... this sounds really good! I have the same kind of ice cream maker which I have not used in forever!! Might be a good time to put the bowl in the freezer!! =)

Sounds yummy! Do you think I could replace heavy whipping cream with half-and-half? I don’t have any heavy whipping cream here right now.
Hi Rosanna, You can substitute whole milk for the half and half and it should be just fine!
Grr. Stupid auto-correct on my phone. I like Rosanne want to know if Half-and-Half be used to replace the heavy cream, NOT replace milk.
